One of my daughter’s favourites, Alice loves these triple cooked chips served with PopUpChefs beef burger or grilled ribeye steak. So I had to share this simple yet yummy triple cooked chips recipe.
For a family of 4, I get 4-6 large maris piper potatoes, peel them, cut them into chunky, medium or skinny chips.
I then wash the starch off the potatoes in the pan, cover with water and bring to boil the chips and boil for just 2 to 3 minutes, If you do super thin French fries, then literally bring to boil, strain and cool.
(tip 1, you can drain from boiling, cover again with cold water which quickly cools the chips)
(tip 2, place your chips on a kitchen towel to dry any excess water)
Once your chips are cooled from boiling, Heat your fryer to 140•c, this is the second cooking, place your chips into the basket and cook until you can pierce a knife into your chip and its soft. Lift the basket out.
Now for the third and final cooking, heat your fryer to 180•c, once it’s up to temperature, drop your basket of chips into the fryer and fry until golden brown and crispy. Toss in a big bowl with a little salt and serve.
The taste and flavour of these triple cooked chips is so worth that little extra effort. Simple yet far superior to shop bought frozen chips.
